Alinea ranks twenty-first — lower than its historical standing would suggest — because the 2025 loss of its third Michelin star opened a genuine question about where this kitchen is now, and this list answers that question honestly.
Alinea opened in 2005 and spent the next twenty years as the most famous restaurant in Chicago by a wide margin. Grant Achatz's modernist kitchen produced courses that were also theatrical events — the inflatable balloon of edible taffy, the dessert painted directly onto the table, dishes that arrived as puzzles. Three consecutive Michelin stars from 2010 onward. James Beard Awards for Outstanding Restaurant, Outstanding Chef, Outstanding Service. In late 2025, the Michelin Guide reduced Alinea to two stars. Achatz expressed public disappointment.
